Ingredients

  • 1 2 lb. beefiness tenderloin, at room temperature
  • For the rub:

  • 1 teaspoon kosher salt
  • 1 teaspoon ancho chili powder
  • 1 tablespoon extra virgin olive oil
  • Serve on the side:
  • chimichurri sauce

Directions

  1. Remove the tenderloin from the fridge, place it onto a plate or platter, cover and bring to room temperature for 45 minutes to 1 60 minutes.
  2. Prepare the rub: Place all of the ingredients for the rub into a small bowl. Stir them together and set bated.
